Classic Smoked Chicken Legs
The mild flavors of the spice blend allow the smoke flavor to star with these turkey drumsticks. Try them with hickory or mesquite wood for two very different flavors! Don't forget the salt.
6 Chicken legs
2 tablespoon thyme
1 tablespoon paprika
2 tablespoons Kosher salt
1 tablespoon pepper
25 ml olive oil
25 ml soya sauce
For the spice blend, mix together thyme, paprika, salt, and pepper.
Oil the chicken legs then rub with the spice blend until well coated, season under the skin if possible too.
Place chicken legs directly on the cooking grates and baste them with a mix of olive oil and soy sauce.
Smoke at 250°F (121°C) for 2 to 3 hours, basting at least every hour until cooked through.
As with all poultry, the meat should temp at least 165°F (74°C) at the thickest part to ensure servable doneness.
